National Wing Day 2025. The Best Fried Chicken Wings.

To make the best fried chicken, you need to take some extra steps. Those steps include buying whole wings instead of wing dings, double-frying, and using a wire rack to cool the wings. The wire rack is key! If you place your wings on a paper towel-lined plate, they will become soggy. You can find a solid baking sheet with a wire rack for about $15!


For the breading process, please invest in some good bowls. Get out of the trenches! We do not use plastic bags to store flour. For the breading process, you must use both hands. Use your left hand to dip the chicken into the egg mixture, and then, using the same hand, place it into the seasoned flour. Use your right hand to press the chicken into the flour. Repeat the process to coat all of the chicken. If you use both hands, it can get messy, so using one hand for the flour and the other for the egg is more efficient.


For frying, you have several options. Use your preferred neutral oil. Avocado, canola, grapeseed, sunflower, vegetable, etc! You can use a deep fryer, a kettle pot, or a stovetop. Heat your oil to 375 degrees when frying. Cook in two batches! Don't overcrowd your fryer!


Okay, those are the basics! Let's get into the recipe.


Ingredients:


4.5 lbs Whole Wing

2 Cups All-Purpose Flour

3 Large Eggs

3 Tbsp Hot Sauce

Neutral Oil


Seasonings:


Garlic Powder

Onion Powder

Black Pepper

Lawry's Seasoning

Tony's Seasoning

Cayenne Pepper

Seasonings and flour.

Directions:


  1. Break down the whole wings. Use scissors to remove any feathers.

  2. In a medium-sized bowl, whisk together the eggs and hot sauce.

  3. In a separate bowl, whisk together flour and seasonings.

  4. Pat your wings dry, then season them with spices.

  5. Heat your oil.

  6. Dip the wings into the egg mixture and then shake off the excess egg.

  7. Place wings into seasoned flour.

  8. Fry your first batch for seven minutes.

  9. Place the first batch of wings onto the wire rack.

  10. Add the second batch of wings to the fryer.

  11. For the second fry, cook for an additional five minutes or until golden brown.

I'm still working on this recipe, but in a small, durable bowl, add 1 tsp of garlic powder, onion powder, Tony's seasoning, sugar, chili powder, and one tablespoon of Cayenne pepper. Be very careful and add 1/2 cup of the cooking oil to the mixture. Use a brush to apply the spice rub evenly.


Save the chicken tips and fat to make chicken broth/stock!
