Hibachi Day Recipes.

Fact or myth? The best fried rice is made with day-old rice? I believe it's a fact! Cook your rice and then place it in a baking sheet. Cover the rice and then place it in the fridge overnight. By doing so, you'll remove all the moisture from the rice. Here are my hibachi day recipes! Give yourself 12 hours to let your rice rest and chicken marinate overnight.

Fried Rice: (2 cups of rice/8 servings)


• White Rice (Riceland) (2 cups)


• Water (1:1 ratio) (2 cups)


• 4 Tbsp Butter


• 6 Large Eggs


• 1 Bag of Frozen Peas and Carrots


• Pinch of Salt


• Sesame Oil (Dynasty)


• Soy Sauce (La Choy)



Teriyaki Chicken:


• 5 lbs Skinless Boneless Chicken Breast


• Teriyaki Marinade * I've used 3 different brands and they're all good. Just make sure it's a marinade/glaze and not just a sauce.


• Garlic Powder


• Onion Powder


• Cayenne Pepper


• Black Pepper


• Salt


Beef and broccoli.

Noodles:

• Chinese Style Lo Mein Noodles (Simply Asia)


• Broccoli


• Soy Sauce


• Sesame Oil


*Optional


• Steak


• Yum Yum Sauce (Terry Ho's)


• Sriracha Sauce (Huy Fong)


• Sesame Seeds


Rice Prep Directions:


1. Wash your rice. Rinse your rice until the water runs clear. I use a 1:1 ratio of rice to water.


2. I use my pressure cooker to cook my rice. You can use a rice cooker, stovetop, or microwave.


3. Add your water, butter, and a pinch of salt to the rice. Follow the directions on the back of the rice bag.


4. Fluff the rice once it's done. Let it cool for 10 minutes.


5. Transfer to a baking sheet and cover. Refrigerate overnight.



Chicken Prep Directions:


1. Cut your chicken into bite-sized pieces.


2. Season your chicken to your preference. Go light on the salt because your marinade will have flavor and sodium already.


3. Once your chicken is seasoned and chopped, transfer it to a large container.


4. Pour your desired amount of marinade over the chicken. Give it a good mix.


5. Cover with a lid and refrigerate overnight.


Cooking Directions:


*If you have a 36" griddle, you might be able to cook everything at once. I have a 22", so I go for fried rice, noodles, and then chicken!


1. Heat your griddle to medium-high heat.


2. Add butter to the griddle. On the right side of the griddle, add your peas and carrots. Cook for 5-7 minutes.


3. On the left side, add the sesame oil.


4. Add your rice. Use a large spatula to break down your rice. It will be a little hard, but that's perfect for frying the rice. (You don't want mushy rice)


5. On the side, add more butter. Scramble your eggs.


6. Season veggies and eggs with salt and pepper.


7. Add a few tablespoons of soy sauce to the rice and then bring everything together. You can add a dash more soy to achieve a nice color, but don't go overboard, or it will be too salty.



Noodles:


1. Follow the directions on the noodles. When your noodles are done, rinse them in cold water. This will prevent them from overcooking.


2. *Cook your broccoli and steak before adding noodles to the griddle.


3. On medium heat, add sesame oil.


4. Add your noodles.


5. Toss around for 1 minute.


6. Add soy sauce for taste and color.


7. Combine broccoli and steak.



Chicken:


1. Cook the chicken on medium heat.


2. Pour the marinated chicken directly on the grill.


3. Cook until 165°F internally.


4. Add more glaze during the cooking process if you'd like!



Summary:


The key to hibachi is using day-old rice and having a greased medium-high griddle. You can add any protein source to the fried rice. I enjoy having teriyaki chicken with a side of fried rice, lo mein noodles, and broccoli.


You can add sesame seeds on top. Hibachi tastes good on its own, but yum yum sauce goes well with the food! I hope this helps!
